In fact, most of the restaurants prepare Bhindi Curry base without tomatoes. But some do prefer tomatoes and even I have used it in this recipe.

Unlike any other North Indian gravy recipes, Shahi Bhindi Masala Gravy is prepared by boiling tomato and onion with ginger and garlic. Traditionally the Indian curries are prepared by sauteing tomato and onions with ghee or oil and later crush it to fine thick paste. Basically, onion and tomato sauce gravy forms the base of most of our curries. However, with Shahi recipes, the tomato and onion are boiled in water, before crushing them to the thick sauce. Boiling would help to gain the rich yellow color to gravy as compared to the other curries with dark red color. Also, add a lot of almonds and cashews to make it more creamy and rich.

The recipe for Shahi Bhindi curry is extremely simple, yet few tips and recommendations for a perfect one. Firstly, wash the Okra (Bhindi) well and let it drain and dry out. Then, wipe off bhindi with a dry cloth and cut them, if there is a moisture then bhindi turn to be sticky. Also, saute bhindi on medium flame till it gets cooked completely. Finally, adding cream is optional, however, makes the gravy more rich and tasty like Shahi Paneer.

Ingredients (1 cup = 250 ML)

For onion tomato paste:

  • 1 onion roughly chopped
  • 2 tomato roughly chopped
  • 3 clove garlic
  • 1-inch ginger
  • 10 whole cashew (Kaju)
  • 5 almonds (Badam)
  • 2 cup water

Other ingredients:

  • 2-3 tbsp oil
  • 10 Okra / Bhindi chopped
  • 1-inch cinnamon (dalchini)
  • 2 cloves (lavang)
  • 1 bay leaf (tej patta)
  • ¼ tsp turmeric (haldi)
  • 1 tsp Kashmiri red chili powder (Lal Mirch powder)
  • ½ tsp coriander powder
  • ¼ tsp cumin powder (jeera powder)
  • 1 tsp salt
  • ¼ cup curd (yogurt) 1 cup water
  • 2 tbsp cream
  • ¼ tsp garam masala
  • 1 tsp dry fenugreek leaves (Kasuri methi ) crushed

Instructions

  1. Firstly, prepare onion tomato paste.
  2. Now heat kadai with 2 tbsp oil and saute 10 okra.
  3. Further heat 2 tbsp oil and saute spices till they turn aromatic.
  4. Now add in prepared onion tomato paste and saute for a minute.
  5. Cover and simmer for 10 minutes or until onion paste get cooked completely.
  6. Add in ¼ tsp turmeric, 1 tsp chili powder, ½ tsp coriander powder, ¼ tsp cumin powder and 1 tsp salt. saute on low flame.
  7. Later, add ¼ cup curd keeping the flame on low and stir continuously.
  8. Also, add 1 cup of water and mix well.
  9. Now add fried bhindi and give a mix.
  10. Boil for 2 minutes or till bhindi absorbs masala.
  11. Put in 2 tbsp cream, ¼ tsp garam masala, and 1 tsp kasuri methi and Mix well.
  12. Lastly, serve shahi bhindi masala with Roti, Chapati, Naan or even with Paratha.

How to make bhindi curry with step by step guide

  1. Firstly, Prepare tomato and onion paste by boiling 1 onion, 2 tomatoes, 3 clove garlic, 1-inch ginger, 10 whole cashews, and 5 badam in 2 cup water for 10 minutes.
  2. Cool completely and blend to smooth paste. Then, Keep aside.
  3. Now heat kadai with 2 tbsp oil and saute 10 okra.
  4. Cook the okra till it turns dark brown. Keep aside.
  5. Further heat 2 tbsp oil and saute 1-inch cinnamon, 2 cloves, 1 bay leaf till they turn aromatic.
  6. Now add in prepared onion tomato paste and saute for a minute.
  7. Cover and simmer for 10 minutes or until onion paste get cooked completely.
  8. Make sure to check the onion tomato paste has thickened.
  9. Add in ¼ tsp turmeric, 1 tsp chili powder, ½ tsp coriander powder, ¼ tsp cumin powder and 1 tsp salt. saute on low flame.
  10. Further, add ¼ cup curd keeping the flame on low and stir continuously.
  11. Also, add 1 cup of water and mix well. Adjust consistency by adding water as required.
  12. Now add fried bhindi and give a mix.
  13. Boil for 2 minutes or till bhindi absorbs masala.
  14. Add 2 tbsp cream, ¼ tsp garam masala, and 1 tsp Kasuri methi. Mix well.
  15. Finally, serve shahi bhindi masala with Roti, Chapati, Naan or even Paratha.
