Ingredients

  • 6 to 8 small sized (Bitter gourd/karela)
  • 1 tsp salt for marination
  • 1 cup water to wash

For stuffing:

  • Gram flour – ¼ cup (4 tablespoons)
  • Cumin seeds – 1 teaspoon
  • Asafoetida – 1 pinch
  • Ginger Paste – 1 Tablespoon
  • Coriander Powder – 2 Tablespoons
  • Fennel Powder – 2 Tablespoons
  • Turmeric powder – ½ teaspoon
  • Amchoor Powder – 1 Tbsp
  • Red Chilli Powder – ¼ teaspoon
  • Salt – 2 teaspoons or flavors
  • Oil – 4-5 tablespoons

Instructions:

  1. Firstly, prepare the stuffing by heating oil.
  2. Add onions and ginger garlic paste.
  3. Further, add reserved karela skin and seeds.
  4. Continue to saute for 2 minutes.
  5. Additionally, add spices and saute on low flame.
  6. Now add garam masala and sugar.
  7. Mix well, and the stuffing is ready.
  8. Take the washed, peeled and slit karela and stuff the stuffing.
  9. Further, with the help of the toothpick, secure tight.
  10. Fry the stuffed karela in 3-4 tbsp oil on low flame.
  11. Also, make sure to fry the bitter gourd both sides.
  12. Cover and simmer for 10 minutes stirring occasionally.
  13. Further, add leftover stuffing masala and mix gently.
  14. Cover and simmer further for 2 minutes.
  15. Finally, bharwa karela or stuffed bitter gourd is ready to serve with rice or chapatti.

How to make stuffed bitter gourd step by step

Marination bitter gourd recipe:

  1. Firstly, Peel off the stem of bitter gourd with a knife scratched.
  2. Cut bitter gourd from the middle to the length so that bitter gourd is attached to the bottom.
  3. Take out the seeds slowly, without damaging karela.
  4. Now place the scrapped karela into a bowl.
  5. And also reserve the skin and seeds as they will be used in stuffing.
  6. Sprinkle a tsp of salt over karela and rub it well. Make sure to spread salt inside the karela too.
  7. Rest for 30 minutes, as they help to reduce the bitterness.
  8. After 30 minutes, wash the karela with a cup of water.
  9. And also squeeze off the water completely and keep aside. Drink the karela juice as they are healthy for diabetic patients.

Bharwa karela or stuffed bitter gourd recipe:

  1. Firstly, prepare the stuffing by heating oil.
  2. Add onions and ginger garlic paste. saute well till they change color.
  3. Further, add reserved karela skin and seeds. you can also soak in salt water to remove the bitterness.
  4. Continue to saute for 2 minutes. this helps to reduce the bitterness.
  5. Additionally, add ½ tsp turmeric, 1½ tsp coriander powder, ½ tsp jeera powder, 1 tsp chili powder, salt and 1 tsp amchur.
  6. saute on low flame till the spices turn aromatic.
  7. Now add garam masala and sugar.
  8. Mix well, and the stuffing is ready.
  9. Take the washed karela and stuff the stuffing as much as possible.
  10. Further, with the help of the toothpick, secure tight. Alternatively, use thread to avoid masala from coming out.
  11. Fry the stuffed karela in 3-4 tbsp oil on low flame.
  12. Also, make sure to fry the bitter gourd both sides.
  13. Cover and simmer for 2 minutes, or till one side of karela gets cooked well.
  14. Stir occasionally in between to prevent burning.
  15. Again cover and simmer for 5 minutes.
  16. Make sure the karelas are cooked well from all the sides.
  17. Further, add leftover stuffing masala and mix gently.
  18. Cover and simmer further for 2 minutes.
  19. Finally, bharwa karela or stuffed bitter gourd is ready to serve with rice or chapatti.
