Mutter mushroom recipe is one of the tastiest flavorsome vegetable dishes. This dish is not just tasty but also extremely healthy. The curry gets its great taste from its tomato and onion based sauce tossed in a cashew paste. The addition of cashew nut paste does increase the calories but it gives it a slight nutty creamy sweetness which you would like. It is an ideal side dish to roti/chapati and jeera rice or plain steamed rice. There are several ways this recipe can be prepared but I have tried to show it in a simple way by blending the sautéed onion and tomatoes into a fine paste.

While the recipe is very easy to prepare, yet some tips, recommendations and serving suggestion for Mutter mushroom recipe. Firstly, the recipe can be easily extended with the combination of vegetables including mushroom. You can use the combination or either of vegetables like aloo, gobi, broccoli and even paneer. Secondly, I have prepared this recipe in a vegetarian style without butter and cream. But if you do not have any issue with milk products, then add a tbsp of cream at the end to make it more creamy and rich. Lastly, serve mutter mushroom recipe with roti/chapati, naan or kulcha.

Ingredients (1 cup = 250 ML)

For onion tomato paste:

  • 2 tsp oil
  • 1 onion finely chopped
  • 1 tbsp ginger-garlic crushed
  • 2 tomato finely chopped

For sauting mushroom:

  • 2 tsp oil
  • 10 mushrooms quartered
  • ½ tsp pepper crushed
  • ½ tsp salt

For curry:

  • 2 tsp oil
  • 1 bay leaf (tej patta)
  • 1-inch cinnamon
  • ½ tsp turmeric (haldi)
  • 1 tsp cumin( jeera)
  • 1 tsp Kashmiri red chili powder (Lal Mirch powder)
  • ¾ tsp coriander powder
  • ¼ cup cashew paste
  • 1 cup water
  • ½ cup peas / mutter fresh / frozen
  • ½ tsp salt
  • 1 tsp Kasuri methi (dry fenugreek leaves) crushed
  • 2 tbsp coriander leaves finely chopped
  • ¼ tsp garam masala

Instructions

  1. In the same Kadai heat 2 tsp oil and saute 1 bay leaf, 1-inch cinnamon, 1 tsp cumin. saute until the spices turn aromatic.
  2. Keeping the flame on low saute, ½ tsp turmeric, 1 tsp chili powder, and ¾ tsp coriander powder.
  3. Add in prepared onion tomato paste and cook well.
  4. Keep stirring until the onion tomato paste thickens and discharges oil.
  5. Now add ¼ cup cashew paste and mix well.
  6. Add 1 cup water and stir well adjusting consistency as required.
  7. Further, add ½ cup peas and sauteed mushrooms. Mix well.
  8. Cover and cook for 5 minutes or till mushrooms and peas get cooked totally.
  9. Now add 1 tsp Kasuri methi, 2 tbsp coriander leaves, and ¼ tsp garam masala. mix well.
  10. Finally, serve mutter mushroom recipe with roti, naan or kulcha.

How to make mutter mushroom step by step guide:

  1. Firstly, in a large kadhai 2 tsp oil and saute 1 onion, 1 tbsp ginger-garlic.
  2. Also, saute 2 tomatos till they turn soft and mushy.
  3. Allow the mixture to cool completely and transfer to the blender.
  4. Blend to smooth paste without adding any water. Keep aside.
  5. Now heat 2 tsp oil and saute 10 mushroom, ½ tsp pepper and ½ tsp salt.
  6. Sauté for 2 minutes or till mushrooms changes colour.
  7. Do not break mushrooms, remove gently and keep aside.
  8. In the same kadai heat 2 tsp oil and saute 1 bay leaf, 1 inch cinnamon, 1 tsp cumin. saute till the spices turn aromatic.
  9. Keeping the flame on low saute, ½ tsp turmeric, 1 tsp chilli powder and ¾ tsp coriander powder.
  10. Add in prepared onion tomato paste and cook well.
  11. Keep stirring till the onion tomato paste thickens and releases oil.
  12. Now add in ¼ cup cashew paste and mix well. To prepare cashew paste, soak 10 cashews in ¼ cup of warm water for 15 minutes and blend smooth.
  13. Add in 1 cup water and stir well adjusting consistency as required.
  14. Further add ½ cup peas, sauted mushrooms and ½ tsp salt. Mix well.
  15. Cover and boil for 5 minutes or till mushrooms and peas gets cooked completely.
  16. Now add 1 tsp kasuri methi, 2 tbsp coriander leaves and ¼ tsp garam masala. Mix well.
  17. Finally, serve mutter mushroom recipe with roti, naan or kulcha.
